I am in no way a real, qualified chef, but I can hold my own in the kitchen. In the process of trying to meal prep with little to no groceries for the rest of the week, I came up with a dish I just had to share with you guys. If you try it or make any changes, let me know how it goes!
1 can of black beans
1 can diced tomatoes with chiles
1 can sweet corn
2 cups of cooked brown rice
Preheat oven to 350. Cook the brown rice per instructions. Drain all of the cans so your casserole won’t be soupy. Grease your pan (I used a round glass one but it depends on how much you want to make. You can easily double this recipe for meal prep.) Mix all the ingredients except the cheese.
I cut the cream cheese into little pieces to mix within and sprinkled the cheese on top. This is optional and a little less healthy. Both cheese were reduced fat and I plan on eating this for lunch so I’ll have time to work it off.
Bake about 20-25 minutes or until cheese is melted to your liking. Since the ingredients are already cooked, this doesn’t take long to prepare at all.
